I hope this finds you warm and well, dancing in the fallen leaves, dreaming with the starry skies, and preparing for the time spent within. We recently found a little, old radio and set it up in the kitchen, now I can't imagine a time without it. I'm in love with baking breakfast and I'll share the recipe that powered me through my first 5k run for the Friends of the Grand Prairie a couple weekends ago... who knew running with a herd could be so fun!

Now, this might be the best part...
Quinoa Berry Baked Breakfast
Preheat your oven to 375 degrees
Ingredients:
1 banana
2 cups non-dairy milk of your choice (it's oat milk in our home) or water
1 teaspoon vanilla
1+ heaping Tablespoons cinnamon
a dash of ginger
a dash of anise
a dash of cardamom
a good swirl of maple syrup
1 cup Quinoa
3 heaping Tablespoons ground flax
2 heaping Tablespoons chia seeds
a giant handful of pecans
2 hand fulls of cranberries or blueberries
In a large bowl smoosh a banana and mix in milk, vanilla, and maple syrup.
Add quinoa, flax, chia, cinnamon, ginger, anise, cardamom, and stir...
Add a handful of pecans and berries.
Pour it all in a beloved sheet pan (we use my husband's grandmother's pink Pyrex that is 8"x12" with a thin barrier of coconut oil) and bake in the oven for 50 minutes.
We eat it hot, in sixths, with a dash of oat milk. This will keep in the refrigerator for 3 days, and is delightful as a leftover.
